Raclette is a dish indigenous to parts of Switzerland. The raclette cheese round is heated, either in front of a fire or by a special machine, then scraped onto diners plates, the term raclette derives from the French word racler, meaning “to scrape,” a reference to the fact that the melted cheese must be scraped from the unmelted part of the cheese onto the plate. Traditionally the melting happens in front of an open fire with the big piece of cheese facing the heat. One then regularly scrapes off the melting side. It is accompanied by small firm potatoes (Bintje, Charlotte or Raclette varieties), gherkins, pickled onions, and dried meat, such as jambon cru/cuit , jambon blanc, saucisson, rosette. We serve it a a modern way of serving raclette involving the newest generation cheese heater right a your table.

The machin is at your table so you’re the boss here, we will carry all the ingredient to the table, let the cheese melt, scrap ( Raclette ) with a knife in a small plate, place the cheese in the middle of the table. Every guest is invited to take their share of melted cheese and pour it over delicatessen, potatoes, gerkins and onion. Eat everything together, right now, you’re right in the middle of Swiss or French Alps !
